I alway double a turkey loaf recipe so we can eat on it for a few days. I split the mix into two loaf pans. We can get six dinner portions from each loaf. Ingredients

    Loaf Ingredients:
    Turkey, Ground turkey, 93% lean, - 2 lbs +/-
    Onions, raw, .5 cup, chopped
    Green Peppers (bell peppers), 3/4 cup, chopped
    Peppers, sweet, red, fresh, 3/4 cup, chopped
    Spinach, fresh, 1 cup
    Minced Garlic, 2 tsp
    Thyme, fresh, 3 tsp
    Egg, fresh, 1 large
    Ketchup, 3/4 cup
    Irish Oatmeal (McCann's), 1.0 cup
    Corn Flake Crumbs – ¼ cup
    Lea & Perrins The Original Worchester Sauce - 1 Tbl
    Pepper, red or cayenne, ¼ tsp
    Salt, 1.5 tsp
    Savory, ground, 1 tsp
    Pepper, black, .5 tsp or to taste
    Garlic powder, 1 tsp

    Topping Ingredients:
    Ketchup, 3/4 cup
    Brown Mustard, 1 Tbl
    Gourmet Garden Chili Pepper Blend, 1 tsp
    Sprig of Thyme, 2

Directions

In a large bowl -
Chop the green pepper, red pepper, spinach and onion
Mince the leafy portion of the fresh Thyme (discard the stems) and place in bowl.
Place the ground turkey and add minced garlic, Worchester Sauce and remaining spices.

Mix the above well and then add the egg, oatmeal, corn flake crumbs and ketchup.
Mix well and separate into two greased loaf pans. Create a slight indentation on the top of the loaf for the topping.

Topping:
Mix the ketchup, mustard and chili pepper blend. Put 1/2 of the mixture on each loaf and spread it over the loaf, leaving slightly more in the indentation. Place a spring of thyme on top.

Bake at 375 for one hour. Each loaf pan makes 5 servings.
