Introduction

Number of Servings: 3

Ingredients

    2 tbsp coconut oil, or any cooking oil you prefer
    2 cloves garlic, minced
    1 lb shrimp, peeled and deveined (yield=12oz)
    1/2 cup white wine
    1/4 cup lime juice
    1 can diced tomatoes, drained (I use no salt variety)
    cumin, cayenne pepper, and salt to taste... about 1/4 tsp each in this case.

Directions

Heat oil and garlic in skillet over med to med-high heat until garlic starts to brown. Reduce heat to medium and add shrimp. Cook, stirring and flipping occasionally, 4 minutes. Add wine and cook 2 minutes more. Add lime juice and tomatoes and seasonings. Cook until bubbling, about 2 minutes. Remove shrimp with slotted spoon and set aside on large plate. Turn heat to high and boil sauce, stirring constantly. Cook until thick and reduced to your liking. Pour over shrimp and serve. Yield 3 servings, about 8 shrimp each in this case.
