This recipe literally has just chicken breasts, chicken bullion, frozen chopped onions, a bag of frozen mixed vegetables, and instant rice in it. I also added some Mrs. Dash Garlic and Herb to season it. And it uses the crock pot. Ingredients

2 chicken buillion cubes
3 chicken breasts, frozen is fine
1 cup chopped onion, frozen is fine
water
Mrs. Dash Garlic and Herb to season
1 10 oz. bag frozen mixed vegetables
2 cups instant white rice
Directions
Mix the buillion cubes with some hot water and add to crock pot. Throw in frozen chicken breasts and onion. Season with Mrs. Dash. If you have the option, it's better to add the mixed vegetables around lunchtime so they don't get too mushy, but you can throw them in the pot in the morning if you can't. Cover all with water just enough to get most of it. Set to low for the whole day.
When you get home, add the instant rice and maybe some more water if it looks like it needs it. I like a stewy texture, but you might prefer soup. If you're going for soup, pull out the chicken and tear it apart too. I like to keep the breasts together to portion out my bit from the kids'. Set to high for the next 20-30 minutes.
