Introduction

This is a great high protein type of crepe/pancake that we love to make ahead and take for lunches. You can wrap inside your favorite toppings and yummy! Ingredients

    1/3 c egg whites
    1/3 low fat cottage cheese 1%
    1/2 scoop protein powder
    1 slice of turkey bacon
    1/4 c red peppers
    1 kraft slice of cheese, low fat

Directions

Add egg whites, cottage cheese and protein powder to a blender and mix until smooth. pour the batter on a non-stick surface (can spray with PAM), and cook like a big flat crepe until quite browned on one side. Gently flip the crepe looking wrap with 2 flipers to finish cooking the other side. Once cooked wrap the chopped bacon and red peppers and cheese inside the crepe and roll it up to eat like a wrap. You can mix and match your fillings, or just eat it alone with a bit of syrup, or spread peanut butter and low cal jam on the inside. This is a great recipe for people on the go that are trying to get more protein in their diet, or for physically active people that need the protein to supplement their body's requirements for working out.
