Number of Servings: 8

Ingredients

    1 lb. lean ground turkey
    1 cup chopped onion
    1 cup chopped bell pepper
    1/2 cup mushrooms (canned or fresh)
    2 cups tomato sauce
    2 cups diced tomatoes
    5 tsp. Italian seasoning, divided
    1/2 Tbsp. black pepper
    3 tsp. garlic salt, divided
    7 oz. whole grain thin spaghetti

Directions

In a deep, nonstick skillet brown turkey. Season with 2 tsp. Italian seasoning, pepper and 1 tsp. garlic salt. Drain excess water/fat. Add onions, bell pepper and mushrooms. Cook until soft. Add tomatoes and tomato sauce. Let simmer for 10 minutes.

Meanwhile, cook noodles according to package directions, omitting oil and salt.

When noodles are al dente (I usually check by thrown one against the side of the stove...if it sticks, it's done!) drain water and then mix with sauce and let simmer 5 minutes. Or, if you prefer, ladel sauce over noodles just before eating.

Makes 8 softball-size servings.

    I didn't have mushrooms or yellow onion, so I used zucchini and green onion in my sauce instead. This was such a yummy recipe! I will definitely use this again! - 7/30/13
