Ingredients

2 cups water
1 1/4 cup quinoa, red or brown
2 TB olive oill
1 TB vinegar, rice or balsamic
1 TB lemon juice
1 TB orange juice
1/2 cup green onions chopped
2 cups shredded chicken breast
2 cups green or red grapes, halved
1/2 cup sliced and toasted almonds.
1/2 cup fresh mint chopped.
1/2 cup fresh basil chopped
1/4 cup fresh cilantro chopped.
sea salt and pepper to taste
Directions
have chicken cooked, shredded and chopped ahead of time if desired.
Rinse quinoa under cold running water and drain. Bring water to boil and stir in quinoa and a pinch of salt. reduce heat and simmer about 15-20 min until most of liquid is absorbed. Uncover and set aside to cool.
Ina a large bowl, whisk vinegar, lemon, organge juices wtih salt and pepper. Slowly add in olive oil and the fresh chopped herbs. Mix well. Add cooled guinoa and toss. add chicken, grapes and nuts and toss again. Serve at room temp or chilled, if prefered.
