    1/2 lb Halibut, diced small
    4 oz. organic shitake mushrooms, julienned
    3 cloves minced garlic
    1.5 TB minced ginger
    1 med organic red bell pepper, brunoise
    1 med organic red onion, brunoise
    1 oz. orange Zest
    1 cup Napa cabbage
    1 cup raw carrot strips
    1.5 TB hoisin sauce
    1.5 sesame seeds toasted
    1.2 cup soy sauce, low sodium
    1/2 cup rice vinegar
    3 tsp lime juice
    1/2 Tb sesame oil
    1 Tb brown sugar
    1 head red or green leaf lettuce
    8-16 oz. rice sticks, fry.


In hot pan saute garlic and ginger. Add mushrooms, red pepper and red onion. Add Halibut and saute until cooked through.
Add hoisin sauce and orange zest.
For Dipping Sauce: Mix toasted sesame seeds, soy sauce, rice vinegar,lime juice and brown sugar.
To assemble: Portion out on plates; 2-3 lettuce leaves, carrrot shreds/sticks, napa cabbage chiffonade, rice sticks and halibut mix ( 1/6th of recipe) with small bowl for dipping sauce (1/6th of recipe)in the middle of plate.
