Ingredients

    3lbs boneless skinless chicken breast halves. (About breasts halved)
    16oz Jar Frontera Guajillo Mexican Salsa
    1 can black beans, rinsed and drained
    1 can mixed vegetables
    salt, pepper, garlic, pepper, cilantro,other seasonings to flavor

Directions

Rinse and Trim Chicken of Any visible Fat.

Season with spices of your choice. I used garlic powder, minced garlic, salt, pepper, cumin, cayenne pepper, cilantro.

Spray crockpot w/ nonstick spray.

Mix beans, veggie and 1/2 salsa jar in the crockpot.

Place Chicken on top.

Pour remaining Salsa over the chicken.

Cook on High for 3 hours or Low for about 6 hours.

Right before serving, sprinkle cheese on top and leave in crockpot for 5-10mins until it's melted.

Serve and Enjoy!

Makes 12 3-4oz servings or 6 for heartier appetites
