Introduction

Number of Servings: 8

Ingredients

    1 lb boneless chicken breast
    1 onion, chopped
    3 cloves garlic, minced
    1 lb chopped tomatillos
    2 jalapeno peppers, seeded and minced
    4 C chicken stock
    1 C frozen corn kernels
    1 can black beans
    1 C hominy
    2 T chopped fresh cilantro
    1/4 C fatfree sour cream
    salt and pepper to taste
    hot sauce to taste

Directions

makes 8 servings.

Spray large saucepan with pam, cook chicken breast till just done and browned. remove from pan, set aside.
Respray pan if necessary, add onions and garlic. Saute till golden, then add tomatillos and jalapeno. stir to saute slightly, then pour in stock. Bring to boil, simmer 10-15 minutes.
Puree in a processor or with a hand blender, then add beans, corn, hominy. Slice chicken breast and add to soup.
Stir in minced cilantro, taste and season.
Serve with a dollop of fatfree sour cream on top, with tortillas on the side if desired.

    Very Good
    mmmmm..yummy & filling! I used FF plain yogurt in place of sour cream. Next time, I think I will add more jalepenos as the hominy seemed to mellow the heat a bit. Maybe exerimant with cumin and/or chili powder too(?) - 9/20/08
