Ingredients

    4- boneless, skinless chicken breasts, boiled & diced
    1- pkg frozen chipped broccoli, cooked
    1- can cream of chicken soup, undiluted
    1/2- cup lite mayonnaise
    1/2- cup cottage cheese
    4oz- grated low-fat cheddar cheese
    1- tsp lemon juice
    1/4- cup skim milk
    2- cups bread crumbs
    1/2- stick butter

Directions

Combine soup, mayonnaise, cottage cheese, lemon juice & milk to make sauce. In 9x13 oven safe dish, layer broccoli, half of the sauce, half of the cheese, chicken, then the remaining sauce & remaining cheese. Sprinkle bread crumbs on top and place pats of butter over bread crumbs (this will make the top nice and crunchy). Bake in 350 degree oven for about 30 minutes. Makes about 14- 1/2 cup servings.

*If you want to double the recipe to freeze half, do not change amt of lemon juice & increase milk to 1/3 cup.

    Sorry.. The chicken should be layered after the first layers of sauce & cheese, but before the second layers of sauce & cheese. Just found out recently that my friend who gave me this recipe doesn't go through the trouble of layering. She puts chicken & broccoli down then sauce & cheese.

    Good
    Using low or not fat milk, corrage cheese and mayo can cut the fat content even more. Good on calories and carbs. A delicious meal with a side salad. - 3/13/07
