Ingredients

4 Tbsp Ghee (clarified butter)
1/4 tsp black mustard seeds
1/2 Tbsp turmeric
1 tsp coriander
1 1/2 Tbsp cumin
1/2 tsp salt
1/2 cup chopped leeks
1/2 cup split mung beans (yellow) (uncooked)
1/2 cup basmati rice (uncooked)
4 cups water
1 Tbsp ginger grated (fresh)
Directions
1. Heat ghee in soup pot, when it is hot add the mustard seeds. When they pop add the other spices including ginger and the leeks.
2. Stir the spices for a minute or two. Watch that they don't burn.
3. Add the rice and mung beans, stir to coat them with the spices. Then add the water adn bring it to a boi. Cover the pot and turn the head down to simmer for about 1/2 hour.
4. You can add more water if you prefer it to be soupier and you can add more ghee if you want it richer.
