Introduction

My own twist to JOJOMKE's Applesauce Oatmeal Muffins. My own twist to JOJOMKE's Applesauce Oatmeal Muffins.

Ingredients


    1 cup Red Mill Organic Old Fashion Rolled Oats
    1 cup Milk, nonfat
    1 cup Five Roses Whole Wheat Flour
    0.5 cup Brown Sugar, unpacked
    0.5 cup Applesauce, unsweetened
    2 egg white, fresh, large
    1 tsp Baking Powder
    0.5 tsp Baking Soda
    0.5 tsp Salt
    1 tsp Cinnamon, ground
    1 tsp Granulated Sugar
    1 tbsp Flax Seed
    0.6 cup Raisins (not packed)

Directions

Soak the oats in milk for about one hour.

Preheat the oven to 400 degrees.

Measure and mix all the dry ingredients together.

Combine, in a separate bowl, the oat mixture with the applesauce and egg whites, and mix until combine.

Add wet ingredients to dry and mix until just combined.

Do not over mix the batter or the muffins will be tough.

Spoon muffin mixture into muffin pan.

Bake for 20-25 minutes or until done.
