Ingredients

    4 oz Whole Wheat Thin Spaghetti
    1 T Olive Oil
    2 garlic cloves, finely chopped
    1 cup chopped yellow peppers
    1/4 cup chopped onion
    40 small cooked shrimp, peeled and devined
    3 cups crushed and blended tomatoes, or used canned tomatoes
    1 cup fresh spinach
    1 T fresh parsley

Directions

Makes five 1-cup servings

Cook pasta according to directions and set aside. Saute garlic in olive oil for 1 minute on medium high heat. Add peppers, onion and shrimp. Cook for 3 minutes. Add tomatoes, spinach and parsley. Cook until spinach is wilted.
