Ingredients

    1 cup onions, chopped
    2 tsp olive oil
    2 cloves of garlic, minced
    1 cup dry lentils
    2.5 cups water or fat free broth
    1 cup chopped fresh mushrooms
    1 jar Newman's Own marinara sauce

Directions

Cook the onions in the olive oil until tender. Add the garlic and cook for one minute. Add the lentils and broth, bring to a boil, cover and simmer 30minutes. Add mushrooms and marinara sauce and continue to simmer 10 minutes or until the lentils are as soft as you like them. Serve over spaghetti noodles.

    Very Good
    I made this for dinner tonight and it is easy and delicious. I added a can of hunts tomato sauce at the end due to the sauce being a little too thick, but it was fantastic. - 1/2/11
