Number of Servings: 4

Ingredients

    1 tsp Paprika
    4 breast, bone and skin removed Chicken Breast (cooked), no skin, roasted
    0.24 cup (8 fl oz) Chicken Broth
    3 cup, pieces or slices mushrooms, fresh
    1 tsp Italian seasoning
    1/2 tsp Garlic-Pepper Blend
    1/4 tsp Salt

Directions

Sprinkle both sides of chicken with Italian seasoning, garlic-pepper blend, salt & paprika.
Heat 10-in nonstick skillet over medium heat. Add chicken; cook 3 minutes. Turn chicken; reduce heat to medium-low. Stir in broth and mushrooms.
Cover; cook 4 to 7 minutes or until chicken is no longer pink when center of thickest part is cut (170°F).
Garnish with parsley for extra color.

    Toss in some baby spinach with the mushrooms, and you get your greens in! Sprinkle w/fresh parmesean. Yum. - 6/18/09

    Works well in a crockpot too - for those busy days when you need to have something ready and waiting at home when you get off of work.
    Cholesterol number does look awful high... Is that a typing error?

    Sounds great, will try it next time. Another quick trick-use 2-4 chicken breasts , put in microwave container, use 1 T Italian salad dressing and 1 T lemon juice for each breast, cover, and cook on high for 8-10 minutes, depending on microwave. Great hot or cool off and use in salad. - 4/26/09

    I sauteed the chicken in a bit of olive oil, and added a few handfuls of spinach leaves in the last few minutes of cooking. Awesom!! - 4/23/10
