Ingredients

    2 tbsp. land o lakes, salted whipped light butter,
    2 tbsp. organic all-purpose white flour
    1/4 cup raw onions, diced
    ¼ cup mushrooms, fresh-diced
    1 package (6 oz) yields canadian bacon)
    2 cup milk, nonfat
    3 cup egg substitute, liquid (egg beaters)
    1 tsp. salt
    ½ tsp. black pepper
    1 cup cheddar or colby cheese, low fat, shredded

Directions

Melt the butter in a deep sided fry pan (or dutch oven); add the onions. Sauté until translucent. Add the diced mushrooms, and diced canadian bacon, and stir into the onions. Add the flour, stir and cook on medium/high heat for 1 minute. Add the milk and cook until thickened. Add salt, pepper and ½ cup cheese, and the egg substitute. Heat through.

Pour into a large buttered casserole dish. Bake for 30 minutes, or until set.

Remove from the oven and sprinkle the remaining ½ cup shredded cheese on top and return to the oven for 5 minutes, or until cheese is melted.
