1/2 c. canned pumpkin
1/3 c. brown sugar
1/4 c. egg beaters
1/2 c. unsweetened applesauce
1 c. grated carrots
1 c. grated zucchini
1 c. all-purpose flour
1/4 c. flax meal
1/4 c. oat bran
1/4 c. wheat germ
2 t. baking powder
1 t. cinnamon
1/2 t. nutmeg
1/2 t. ginger
1/2 t. salt
1/4 c. walnuts, chopped (optional)
1/4 c. almonds, chopped (optional)
1/8 c. roasted sesame seeds (optional)
1/8 c. sunflower seeds (optional)
1/8 c. pumpkin seeds (optional)
1/4 c. raisins (optional)
1/4 c. dates (optional)
Directions
Preheat oven to 400F
In a large bowl, stir together pumpkin and sugar. Beat in egg, then applesauce. Stir in carrots, zucchini, nuts, seeds, raisins, and dates.
In another large bowl, whisk together flour, flax meal, oat bran, wheat germ, baking powder, cinnamon, nutmeg, ginger and salt. Fold dry ingredients into wet, until just mixed. Spoon batter evenly into a sprayed muffin tin (or maybe foil lined, paper will stick!) and bake 18-20 minutes or until done.
