Introduction

These are super easy to make, yummy and very filling! These are super easy to make, yummy and very filling!

Ingredients

    -2 eggs
    -1 pat of butter
    -1-2 oz of cream cheese
    -1 tblsp sugar free jam of your choosing

Directions

1. Set pan on stove at medium heat. I use a pan with a 5-7 inch circumference on the cooking surface. Add pat of butter and let melt. You want the egg to cook kind of slowly so it doesn't get too brown on the cooked side.
2. I scramble the eggs and then pour into the pan. Using a spatula, I will "break the surface a bit once it starts cooking and tip pan so the runny part runs into the holes and cooks.
3. Add 1-2 oz of cream cheese in the middle and fold over one side, then fold that over so it closes completely. I will usually let it cook for a few seconds like that and then flip the whole crepe over to cook a few seconds on the other side giving the cream cheese time to melt.
4. Remove from pan and spread 1 tblsp of Sugar Free syrup or jam over the top and enjoy!

This is about 7.7 carbs per crepe. Most of those come from the SF Jelly so if you want to cut carbs a bit, maybe use a Torani syrup?
