Introduction

Ingredients

1 Tspn Olive Oil
2 cloves garlic
1 can chopped (NOT diced) Clams
SEASONINGS Recommendation:
Two shakes of the oregano
Four shakes of the parsley
Two shates of the crushed red pepper.
7 oz whole wheat speghetti cooked in salted boiling water
Directions
This makes 3 small dinner servings (or two large ones)
Put the water on for the Pasta.
Put the garlic through a crusher or dice it very small. Sautee it in the olive oil until slightly brown. Add the chopped clams and seasonings. Turn off the heat becaue you don't need to let the clams cook at all.
Cook the pasta in SALTED boiling water. Heat the clam sauce at the last minute so as not to overcook the clams. I plate this in the kitchen and do not serve it "family style" because doing it that way ensures a more even distribution of clams.
Before I was dieting I used to put in 1/4 cup of olive oil. But I hardly notice the smaller amount of oil and the calorie reduction is worth it.
