Introduction

A healthy vegetarian mousaka! A healthy vegetarian mousaka!
Number of Servings: 4

Ingredients

    1 tsp Olive oil
    1 large onion
    1 large/2 medium peppers
    1 300g bag Quorn mince
    Garlic, cinnamon, herbs
    Tin of chopped tomatoes
    1-2 tbps tomato puree
    1 medium sized aubergine (egg plant)
    A cup-ish greek yoghurt
    1 egg
    30-50g cheese of your choice, grated

Directions

Finely chop the onion and pepper and fry in the oil. Add in quorn.
Put in tinned tomatoes and tomato puree, then add in 2 tsps each of garlic, cinnamon and mixed herbs. Fresh garlic can be used instead - lightly fry with the onion.
Allow this to bubble away for awhile.

Slice aubergine into half centimetre thick slices. Layer these in the bottom of a dish. Cover with above mixture. Put another layer of aubergine on top.

For the topping beat together the egg and the yoghurt. Pour this over the top, spreading evenly. Sprinkle with grated cheese.

Cook on 180 C for 30-40 minutes.
