Number of Servings: 12

Ingredients

    1 1/2 C Whole Wheat Flour
    1/2 C brown sugar, packed
    1/2 t baking soda
    3/4 t baking powder
    1 1/2 t pumpkin pie spice
    1/2 t salt
    2 eggs
    1 C pumpkin puree
    1/2 C unsweetened applesauce
    1/2 C honey
    1/2 C chopped pecans

Directions

In large mixing bowl, combine flour, brown sugar, baking soda, baking powder, pumpkin pie spice and salt. In separate bowl, whisk together eggs, pumpkin, applesauce, and honey. Add pumpkin mixture and pecans to dry mixture. Stir by hand until just blended.

Bake at 350 for 18-20 minutes. Makes 12 muffins.

Note: To reduce fat and calories, omit the pecans and use 3 egg whites instead of 2 whole eggs.

    Really like these and will def make again. I got 14 muffins and did not add the pecans which brought calories down to 133 per muffin. :) - 10/22/11
