Ingredients

1 Tbsp olive oil
1 Tbsp whole wheat flour
1 tsp curry powder
1 pound lean thin pork chops
15 oz canned yams, drained
15 oz canned pears, reserve 1/2 C juice
1/2 tsp thyme
1/8 tsp pepper
Directions
In a large skillet, heat the oil.
Mix flour, curry and pepper together in a pie pan. Dredge each pork chop in flour mixture and add to the skillet. Saute for 3 minutes on each side.
Add pears and y ams to pork. Mix in pear juice, thme, pepper and salt (to taste). Cook 10-15 minutes longer on low until pork is cooked through.
