Easy bake Egg and Veggie Dish Easy bake Egg and Veggie Dish
Number of Servings: 6


    1 (16 oz) carton egg whites (or egg substitute)
    1 cup nonfat or low-fat shredded cheese
    1 cup mushrooms
    1 medium zucchini


Whisk all ingredients together into a casserole dish. Cook uncovered at 350 degrees for 30-45 minutes, or until a knife comes out of the center clean. Just watch your cook time since all ovens cook at different rates and different casserole dishes cook different ways.

You can use whichever veggies you like; you aren't stuck with just the mushrooms and/or zucchini. I've also done it with asparagus.
