Introduction

Ingredients

500 gm lean ground beef
1 cup chopped onion
3 cloves garlic, minced
1 cup chopped red pepper
2 carrots, thinly sliced
2 tsp each dried oregano & basil
1/2 tsp each salt & pepper
2 14oz cans crushed tomatoes
2 cups whole-wheat macaroni
1/4 cup shredded low-fat cheddar cheese
1/4 cup minced fresh parsley
Directions
In Dutch oven or large deep saucepan, saute beef over medium-high heat, breaking up with spoon, until no longer pink, drain off any fat.
Add onion, garlic, red pepper, carrots, and all spices to pan; cook over medium heat, stirring occasionally, until onion is softened, about 5 minutes.
Add tomatoes & 3 cups water; bring to a boil. Stir in macaroni; reduce heat, cover and simmer, stirring occasionally, until pasta is tender but firm, about 20 minutes.
Sprinkle with Cheddar cheese and parsley, continue simmering until cheese has melted.
