Introduction

Ingredients

    1 28 oz. can diced tomatoes
    1 15 oz. can garbanzo beans
    2 cloves garlic
    1 Tb ghee
    1 Tb yellow curry powder (I used hot madras curry)
    1 Tb ground cumin
    1 tsp ground turmeric
    1 tsp ground cinnamon
    1/4 tsp ground cardamom
    1 to 2 tsp ground cayenne pepper
    sea salt to taste (not included in sodium count)

Directions

In a sauce pan, melt ghee on medium heat and add crushed garlic. Simmer for 2 minutes. Add diced tomatoes and garbanzo beans. Use a potato masher to mash the beans into the tomatoes (doesn't have to be completely mashed, just break up most of the beans). Add the rest of the spices and lower heat to medium low. Simmer for 20 minutes, stirring occasionally.

Makes 8 1/2 cup servings
