Introduction
I had taken several recipes from Sparkpeople's, and combined the way i liked it. Some of the recipe's didnt have a finish or correct ingredients so I hope Mine is completed. I went to walmart and got my ingredients
1 large can of libby's pumpkin filling think it was 29 ounces and 1 small around 15 oz
Egg beaters, ( not the whites) need 6 eggs which for the beaters is 1/4 cup per egg, i put in cup and 1/2
Cant believe its not butter, I had bought the small tubs that come in 2's and used 1 of them.
Bag of walnuts and chopped them up when I got home and put in 2 cups, you can put in less if you don't like them.
used all the seasonings, all ground, nutmeg,cinnamon, allspice, pumpkin, baking soda, baking powder, 1 teaspoon, and 1/2 of teaspoon for the clove.
4 cups of whole wheat flour, it will taste a little nutty but its good.
3 cups of splenda baking
1cup of water
1/4 cup of canola oil
Directions
I made this in 8 mini muffin pans and got 5 slices out of each one.
get a big bowl and put in the pumpkin mix, the eggs, butter water, oil and nuts mix it up,
then add the flour and all seasonings, and sugars.
mix it all together. Ta da!!
Heat oven to 325 spray Pam organic canola oil on the pans
and sprinkle wheat flour in the pans to cover the oil a bit, shake off access.
heat in the mini tins for 35 minutes or when toothpick comes out clean.
