Ingredients

    2 c. flour
    1 c. sugar
    2 1/2 t. baking powder
    3/4 t. salt
    3/4 c. grape nuts cereal (generic type works fine and is much cheaper)

    1/2 c. milk
    1 c..smashed bananas
    1 egg, beaten
    2 T. melted butter

Directions

Stir together the dry ingredients.
In a separate bowl, stir the wet ingredients together.
Then stir the wet mixture into the dry, just until moistened.

Pour into grease loaf pan.
Bake at 350 about 1 hour.

    I made this with zucchini instead of banana to use some up. it was great! Dense, moist, and still healty! - 9/4/12

    I used an 8" x 4" loaf pan. Used half gran Stevia with the sugar. I assume the grapenuts give the feeling of nuts for some people w/allergies to nuts. Beautiful loaf! This is good, but possibly a little drier than I prefer -- but it was great with a little light butter and warmed bread! - 12/14/18
