Ingredients

    1 tbsp olive oil
    1 medium onion, sliced thinly
    2 large cloves garlic, minced
    24 oz Tilapia fillets
    1/2 tsp salt
    thorough sprinkle of pepper

Directions

Heat the olive oil in a large diameter pan over medium heat. Add the onion and cook until somewhat softened.
Add garlic and continue cooking for a minute or two.
Add the tilapia fillets, overlapping thin parts as needed to fit them into the pan.
Sprinkle with salt and pepper.
Cover and cook over medium low heat until bubbling; turn to low to finish cooking.
Serve with brown Basmati rice.

    I tried on my BBQ! On a piece of nonstick foil (twice the size of a piece of fish) season each piece with a touch of lemon & a sprinkle on yr fave seasoning salt. Put a few slices of onion on top & drizzled with just a touch of Oil. Bring ends together loosely & fold it to seal & BBQ! No cleanup! - 8/17/10

    Incredible!
