Ingredients

    One two pound pork tenderloin
    1/4 cup of pesto sauce (I make my own with less oil)
    10 quartered tomatoes -- I use yellow or green zebra from my garden, but any tomatoes will do.
    1 cup chopped onions
    1/2 cup chopped green peppers
    6 cloves of crushed garlic
    12 cups of water
    1 bag of 16 oz bag of baby lima beans soaked over night
    salt
    pepper
    spices like thyme, basil, sage, rosemary, kosher salt, chopped up from fresh -- should yield no more than about 1/4 cup finely chopped.
    chicken boullion -- 1 or 2 squares maximum

Directions

Take pesto sauce, bouillon and 12 cups of hot water and place in crockpot. Add pork roast, and all other ingredients and let cook for 8 hours. I do mine early in the morning and let it cook all day. Serve in a bowl with lots of side veggies.
