Introduction

This take on lasagna is great served with a salad or bread sticks. You can also add ground beef (and more calories) to the sauce. Ingredients

    Pasta, Lasagna Noodles, 4 noodles
    Spinach, fresh, 1 cup, chopped
    Ricotta Cheese, part skim milk, 0.25 cup
    Mozzarella Cheese, whole milk, 1 cup, shredded
    Marinara Sauce (pasta sauce, spaghetti sauce), 1.5 cup

Directions

1. Cook lasagna according to package. While this is cooking you can chop your spinach leaves.

2. After lasagna is cooked, rinse in cold water to keep separated and pat them dry.

3. Lay lasagna out flat. Spread with ricotta cheese, spinach and mozzarella cheese (reserve 1/2 cup of mozzarella for later).

4. Roll each lasagna noodle up and place in a casserole dish. Top with marinara sauce and cheese.

Cook in oven on 350° for 30 minutes.

Each roll is one serving. Makes 4 servings.
