Ingredients

    2 Medium Russet Potatoes
    2 oz Green Bell Pepper
    4 oz Yellow Onion
    1 Tbsp Vegetable Oil
    Garlic Salt
    Black Pepper
    Non stick Spray

Directions

Makes 4 - 1/2 cup servings.

Warm you skillet on medium heat. Peel potatoes & chop into bite size pieces (1 cm). Dice bell pepper & onion. Combine all ingredients in a bowl, adding oil, garlic salt & pepper. Mix to coat potatoes.

Spray skillet with non stick spray, pour potatoes in a single layer and stir. Cover, cooking on medium heat, for about 10-15 minutes, stirring every 1-2 minutes.

Potatoes are done when they begin to brown and are cooked all the way through. Empty onto a paper towel to drain excess grease, and enjoy!
