Introduction
This is a very tasty, low fat dessert. Serve with a dollop of fat free whipped topping, Yummy served warm on cold evenings. One serving contains less that 1 gram of fat and has LOTS of potassium from the molassas.Original recipe contained 1 TBSP of butter in the milk...that's up to you...butter (or oil) gives the crust a better mouth feel...

Ingredients

4 cups fat free milk
1/3 cup polenta (ground corn)
1/2 C oatmeal, dry
1/4 C whole wheat flour
1/3 C craisins --- or --- raisins/chopped dried fruit
1/2 cup molasses or 1/4 cup molasses plus 1/4 cup dark corn syrup
1/2 teaspoon salt
2 pieces of crystalized ginger (minced)
--- or ---
1 TBSP ground ginger
PAM for baking dish
Directions
1) Mince crystalized ginger.
2) Place 4 cups fat free milk (or soy milk for Vegans) in a medium sauce pan and whisk in the polenta, whole wheat flour, oatmeal, salt, craisins, crystalized ginger (or ground ginger) and molassas.
3) Heat mixture over medium heat for 20 minutes, whisking every couple of minutes so it doesn't stick or clump up,
4) Pour into a PAM sprayed 8 cup casserole dish.
5) Bake for 1.5 to 2 hours at 350 degrees, until set.
6) Divide into 6 servings and enjoy.
Makes 6 (scant cup) servings @ 216 calories.
