Ingredients

6 tbsp olive oil
6 tbsp chili powder
3 lb cubed boneless pork chops

2 med onion diced,
4 small pasilla pepper diced
4 cans diced tomatoes with liquid
4 cloves garlic finely chopped
1 tbsp fresh oregano finely chopped
4 cups chicken or beef stock

1 24 oz can white hominy with packing liquid
1/2 tsp salt

1 bun fresh cilantro chopped
1 bunch green onions chopped
Sour cream to garnish
Directions
Makes 10 1 cup servings
in large stock pot heat 3 tbsp olive oil and toast chili powder until aroma is released
add diced pork and brown until meat is coated with toasted chili powder
add onions, pasilla peppers, garlic and chopped oregano. sautee until onions become a little translucent. Add chicken stock then hominy and diced tomatoes with packing liquids
cover and simmer in crock pot for 2-4 hours
