Introduction

Ingredients

1 cup oat bran
1-1/2 cup 1% milk
1 fl oz lemon juice
1-1/2 cup whole wheat flour
1/4 cup brown sugar, unpacked
1 tsp baking soda
1/4 cup honey
2 servings egg whites
1/3 cup dates, pitted, chopped
1/3 cup pecans, chopped
1 tsp vanilla extract
Directions
Combine milk with lemon juice and let sit for 5 minutes. Combine oat bran and milk /lemon in a medium bowl, stir to mix well and then set aside for 15 minutes.
Combine the flour, sugar and baking soda in separate bowl and mix well.
Add flour/sugar mixture to oat bran along with remaining ingredients (except for fruit and nuts).
Fold in dates and pecans.
You may substitute dates with dried apricots, raisins or prunes. Nuts are optional.
Coat muffin cups with cooking spray, fill 3/4 full with batter.
Bake at 350*F for 15 minutes or until toothpick inserted in center comes out clean.
Allow muffins to sit for 5 minutes before removing from tins. Serve warm or at room temperature. Enjoy!!!
