Number of Servings: 4

Ingredients

    Salad: 8 oz cooked pasta; penne, small shells, or any other shape available
    1 cup each of diced celery and tomatoes
    1/2 cup chopped onions
    1 6-oz can albacore tuna in water, lightly drained and shredded with fingers

    Dressing: 2 Tbsp olive oil, 1 Tbsp balsamic vinegar, 2 tsp brown mustard, whisked together

Directions

Serving size: About 1/4 of salad

Cook 1/2 of an 8 oz box of pasta according to package directions. Rinse with cold water when cooked to preferred doneness to stop pasta from continuing to cook.

Combine pasta, vegetables, and tuna in a medium bowl. In a separate bowl, add the olive oil, balsamic vinegar, and bruwn mustard, whisking together. Pour over salad and mix thoroughly, cover and refrigerate until chilled or overnight, turning and stirring every couple of hours.

If the salad seems a little dry, with refrigeration the tomatoes will release their juices into the salad and add to the moisture in the salad.
