Introduction

Tastes like the fried ones, but much healthier! Tastes like the fried ones, but much healthier!
Number of Servings: 8

Ingredients

    I 27-oz can of whole peeled chiles, drained
    8 oz sharp cheddar cheese
    2 eggs
    2 cups milk
    .5 cup flour
    .5 teaspoon salt

Directions

Spray a shallow casserole with cooking spray.
Cut the chiles into bite-sized pieces, and put into the casserole.
Cut the cheese into fingers and place evenly over the chiles.
Beat the remaining ingredients into a thin smooth batter with whisk of blender.
Pour evenly over the chiles and cheese.
Bake at 350 for 45 or 50 minutes, until the custard is set, and the top is slightly browned.
Serves 8 to 12 as a side dish with beans, posole or roast beef or turkey.
