Introduction

Yummy chocolate cupcakes that are not only healthy and nutritious, they taste great too! Yummy chocolate cupcakes that are not only healthy and nutritious, they taste great too!
Number of Servings: 24

Ingredients

    1 3/4 cups flour
    1 1/2 tsp baking soda
    1 tsp salt
    3/4 cup applesauce
    1/4 cup margarine (softened)
    1 cup splenda
    1/4 cup sugar
    1/4 cup brown sugar
    3 eggwhites
    1/2 cup skim milk
    1 tsp Vanilla ext
    2 TBSP coffee
    1 cup semisweet chocolate chips

Directions

1. Preheat oven 350 degrees. Place cupcake cases in pans
2. Sift flour, baking soda, and salt. Set aside
3. Melt semisweet chocolate chips and coffee in double boiler. Let cool slightly.
4. Cream butter, applesauce, splenda, sugar, brown sugar, and eggwhites. Add melted chocolate chips. Mix well.
5. Add flour mixuture. Mix well. Add vanilla ext. Add milk slowly until well blended
6. Pour in cupcake cases and bake for 25-35 minutes or do toothpick test to see if done.
7. Serves 24. You can frost these cupcakes with whatever frosting you prefer. I suggest leaving the frosting out and serving it with some fat free cool whip...yumm!

    How can you call this recipe "healthy"? Not only does it contain margarine which has processed oils and trans fats, but it also contains Splenda, an artificial sweetener with a history of bad side affects. I would avoid this one like the plague! - 3/22/10

    First This was very good.
    Second, Thissitesux you can substitution the ingredients like the margarine for something else. Splenda can be changed to Raw sugar . So you should not Ripe a recipe when you can make substitution. You learn that on Spark.

    Very Good
    I had left ot the coffee, because I just can't stand coffee in general.These were great even without the frosting. Because of the high sugar in these, I think that's why we don't need any frosting. Great anyway. - 6/22/11
