Introduction

I named this after the Purple Cow shakes my mom used to love. It makes a lovely purple breakfast smoothie, it's low in calories and fat, and dairy-free, which is good if you have milk allergies! Great with a whole wheat English muffin or toast for breakfast, or to replace a milk shake with lunch or dinner. (Try it as a nice drink with a Gardenburger...mmmm) I named this after the Purple Cow shakes my mom used to love. Ingredients

    1 cup low-fat vanilla soy milk
    1/2 cup frozen mixed berries (almost any sort of frozen fruit will do...strawberries, pineapple, melon, grapes...try it, you'll like it!)

Directions

Put soy milk and frozen fruit in a blender. Blend until smooth. If it is too thick, you can add a little more soy milk. Pour into a glass.

Makes 1--1 1/2 cup serving
