Introduction

The veggies help you get a whole serving in your belly before even leaving the house! This hearty (but HEALTHY) breakfast is a sure way to start your day (and your diet) off on the right foot! Ingredients

    Ingredients:
    1 package (4 patties) Jennie-O (or similar low-fat) turkey breakfast sausage
    8 large *Eggland's Best* Eggs
    4 large *Eggland's Best* Egg Whites
    1/4 cup non-fat milk
    1.5 tsp Dijon Mustard (do not sub yellow mustard)
    3-4 slices bread torn/cut into 1/2 inch pieces
    1 small onion, finely chopped
    1 tsp (or 1 close) minced garlic
    1 small green bell pepper, finely chopped
    1/2 pound fresh mushrooms (button or babybell are best)
    1/2 cup fresh spinach, rinsed and chopped (or 1/3 cup frozen thawed)
    2 T chopped green onions/scallions
    1/2 t onion powder
    1 T paprika
    1 cup shredder low fat cheddar, colby or pepperjack cheese



Directions

Pre-heat oven to 350F.

Spray a skillet with cooking spray and over medium heat cook onions and green peppers together until onions are translucent. Add garlic and sausage and brown sausage. (Drain off excess grease). In same pan add mushrooms, scallions, and spinach and continue to cook over medium heat until mushrooms are tender. Set aside.

Add eggs, egg whites, milk, onion powder, and dijon mustard into a blender or food processor and blend for 30 seconds. (This adds the air into the eggs and will make the casserole fluffy!).

In a bowl combine eggs mixture, sausage mixture, bread cubes, and cheese and quickly stir.

Place mixture into a greased baking dish (glass 9x15 works well). Sprinkle paprika on top. Bake for 35-45 minutes. The casserole should become lightly brown on top and the mixture should have completely set.

Let stand for 5 minutes before cutting to serve. Makes 8 (large and satisfying!) servings. Pair with orange or apple slices or juice to get your fruit servining in! And I always, alway serve breakfast with a big mug of hot black coffee.
