Ingredients

1 lb ground turkey
1 tbsp olive oil
1 large onion, chopped
4-6 stalks celery, diced
4-6 carrots, chopped
1 box chicken broth
1 bottle of tomato juice
6 cups water
4 slices bacon, chopped
1 head cabbage, chopped
2 cans black-eyed peas
1 can diced tomatoes
1 packet onion soup mix
Directions
Brown 1 lb of ground turkey, drain
In a large stock pot, sautée carrots, onion, and celery in 1 tbsp of olive oil. When onions are translucent, add chicken broth, tomato juice, and 6 cups of water. Add cabbage and bring to a boil, 2 cans of black-eyes peas, 1 can diced tomatoes, ground turkey, bacon and packet of Lipton onion soup mix. Cover and bring to a boil, then simmer for 30-45 minutes.
