Ingredients

    * whole wheat couscous 1/4 cup dry, 4 serving
    * *Raisins, golden seedless, .25 cup (not packed)
    * Ginger Root, 1 tsp grated
    * Onions, raw, .25 cup, chopped
    * Garlic, 2 clove minced
    * Olive Oil, 1 1tsp
    * Cilantro, raw, 3 tbsp chopped
    * Scallions, raw, 5 medium green tops sliced
    Mint fresh - 15 leaves torn
    Salt to taste

Directions

Heat olive oil in skillet over medium heat
Add onion, garlic, ginger and raisins saute for 2 minutes
Add 5 mint leaves by tearing them into pieces over skillet
Cook couscous according to package directions
Chop remaining mint, scallions and cilantro together in a rough chop, add to cooked couscous for final stage of standing with lid closed. Fluff with fork to combine before serving. Salt to taste. Serves 4
