Introduction

My version of Caldo Gallego. I usually use olive oil and no bacon. This New Years I originally made the collard greens Southern Style then next day added the other ingredients to the leftovers to make the soup. My version of Caldo Gallego. Ingredients

    1 bag fresh chopped collards
    1 T bacon fat
    1/4 c Hormel bacon bits (50% less fat)
    1/2 medium onion, chopped
    14.5 oz Swanson Chicken broth
    8 c water
    1 can navy beans

Directions

Saute chopped onions and bacon bits in bacon fat until onions are translucent. Add greens, water and chicken broth, and beans. Bring water to boil, reduce heat, cover and cook until greens are tender. Salt and pepper to taste. A little Crystal or green tabasco is a good addition.

Makes about 8 servings
