Introduction

I wanted to use up some Brazil nuts and some leftover tofu so I created this recipe. These are filling, nutritious and tasty.

Like most veggie burgers they do not retain their integrity as well as a hamburger does inside a bun but I don't mind a bit of a mess.

You could supplement another nut or beans of some sort for the tofu.

Ingredients

    8 oz tofu
    1 egg
    1 onion chopped
    1 clove of garlic
    1 tbsp olive oil
    1/2 cup mushrooms
    1 cup carrot coarsely chopped
    3 ounces Brazil nuts
    1/2 cup tamari or soy sauce
    1 tsp cumin
    1 Tbsp. dried parsley
    1 Tbsp. dried basil
    1/2 tsp oregano
    1/8 tsp cayenne pepper (if desired)
    1 cup wheat germ
    1 cup oatmeal
    1/4 cup wheat flour

Directions

Combine all ingredients, except wheat germ, oatmeal and flour in a food processor. Pulse until combined. Stir in wheat germ, oatmeal and flour. Add water or more flour if necessary to get to appropriate texture, moist but not soupy.

Refrigerate for at least 30 minutes before forming into patties. Use a 1/3 cup scoop to get an appropriate quantity of batter. Shape into patties of the size and thickness you desire. Makes 13 patties.

Bake at 375 degrees for 15 minutes, flip and bake for another 10 minutes. Finished burgers can be eaten, extras can be frozen and then reheated in a microwave, back in the oven, pan fried or grilled.
