absolutely delicious salad that will accompany Mexican style dishes great. absolutely delicious salad that will accompany Mexican style dishes great.
Number of Servings: 8

Ingredients

    1.5 cups of canned or frozen corn kernels
    2 cans of drained black beans
    2 cans of drained garbanzo beans
    2 cans of petite diced tomatoes, drained and rinsed
    1 small can of chopped green chiles (or chopped jalapeno peppers if like spicier)
    1/4 cup olive oil
    1/4 cup lime juice
    3 tbsp honey
    1 tbsp dried cilantro or 1/2 bunch chopped fresh
    1 tsp ground cumin
    salt and pepper to taste
    1 tsp of sugar if like sweeter

Directions

mix all ingredients in big bowl, cover and chill in fridge. The longer it sits, the better it gets. Lasts for several days in fridge.

Makes 8 1 cups servings
