Introduction

This dish is quick and easy to make. It is great by itself or as a side dish. This is one of my "go-to" meals after a long day of work. If you feel ambitious, you can make a cheese sauce for creamier results, but I usually just let the cheese melt into the pasta. This dish is quick and easy to make. Ingredients

    7 oz. cooked frozen shrimp

    3 tbsp. olive oil

    1/2 box whole wheat pasta (about 6.5 oz. dry)

    3 cups mixed frozen vegetables (broccoli, cauliflower, carrot blend is good)

    1 cup shredded cheese (pizza blend, or fiesta blend is good)

    1/4 cup fresh shredded Parmesan cheese

Directions

Makes 8 servings

1. Thaw shrimp in a bowl of warm water for about 10 minutes

2. Thaw vegetables in a bowl of warm water for about 10 minutes

3. Set water to boil for pasta, add 1 tablespoon of olive oil to water: cook per directions on package

4. Drain shrimp and vegetables, keep them separate

5. Remove tails from shrimp

6. Heat 2 tablespoons of olive oil in 10 inch skillet

7. Saute shrimp in olive oil for 5 minutes.

8. Add vegetables to skillet with shrimp. Cover and cook additional 5-10 minutes, stirring occassionally. Season to taste (salt and garlic are good. For something with a bit of kick, Cajun seasonings work well)

9. Combine pasta, shrimp and vegetables in 2 quart casserole dish. Stir in cheeses. Serve hot.
