This recipe if borrowed from the blog Loves Veggies and Yoga. This is a moist yummy muffin. The original recipe calls for another .25 cups of white sugar which can be omitted if you wish. The protein powder is also optional. I didn't realized how much sugar per serving there was until I calculated it on here. Ingredients

.5 cups brown sugar
1 cup oats
2 tbsp vegan margarine
1 heaping tsp cinnamon
.25 tsp baking soda
2 tbsp protein powder
.5-.75 cups water ( batter should be thicker than pancake batter but not as thick as cookie dough)
.5 cups fresh or frozen blueberries or any other fruit
.5 tsp vanilla extract
Directions
Preheat oven to 350. Mix all ingredients except blueberries and let sit for 5 minutes. Mix in blueberries and bake for about 20-25 minutes. Makes about six large muffins.
