Modified version of special K's recipe Modified version of special K's recipeNumber of Servings: 1
Ingredients

1 clove garlic, minced
1 cup cherry or grape tomatoes, halved
1/8 tsp dried oregano
1/8 tsp salt
1/8 tsp pepper
3 oz peeled and deviened medium shrimp
1 tbs crumbled reduced-fat feta cheese
Directions
coat small non-stick skillet w cooking spray, cook garlic over medium-high heat about 30 seconds or until fragrant. Stir in tomatoes, oregano, salt & pepper. cook and stir about 2 minutes until tomatoes are soft.
Add shrimp cook and stir for 2-3 minutes until shrimp or opaque. sprinkle with cheese.
Rinse the noodles well and boil for 5 minutes and strain coat w 1 tsp olive oil and 1 tbs chopped fresh parsley. Top pasta with shrimp mixture. Enjoy!
