Introduction

This is a recipe that I found on SparkPeople but the calories listed on that recipe seemed low to me. The recipe stated it made 8 servings at 235.4 calories/serving. When I calculated this with the listed ingredients I come up with 376.2 calories per serving (8 servings). The picture posted is 1 serving on a normal size plate so it's a fair amount of food. Next time I make this I will probably add some chili powder and cumin to give it a little more flavor. It was very good, but needs just a little more kick. Ingredients

    2 cups of Unle Ben's whole grain fast and natural instant brown rice (uncooked)

    1 Can of Bush's Reduced Sodium Black Beans (drained and rinsed)

    1 cup of canned Del Monte Whole Kernel Corn (no salt added)

    1 can of RO*TEL Original

    1 cup of CHI-CHI's Medium Thick & Chunky Salsa

    1 cup of Kroger Fat Free Sour Cream

    2 cups of Kroger Sharp Cheddar Cheese Shredded

    1 cup of chopped Green Onion

Directions

Cook rice as per the directions on the box (without the butter).

Combine all ingredients except 1 cup of cheese in a large mixing bowl. Spread into a 13x9 pan and bake at 350 degrees for 30 minutes. Sprinkle remaining cup of cheese on top and bake an additional 5 - 10 minutes.
