Introduction
A veg friendly alternative to the traditional sauerkraut balls full of sauerkraut, ground pork, ham, and corned beef, deep fried and golden-delicious. Ingredients

1 pkg. Yves vegetarian Salami slices
6 Morningstar Farms Sausage patties
1 lb deli sauerkraut, drained
1 cup unsweetened soy milk
1 cup all purpose flour
4 Tbsp Egg Replacer (Bob's Red Mill)
12 Tbsp Water
1.5 cups panko bread crumbs
Cooking spray
Directions
run deli slices, and sausage patties through meat grinder or food processor (can also add a small spanish or white onion). Brown in a large non-stick skillet.
Thoroughly mix soymilk and flour in a large measuring cup or mixing bowl until smooth. Add to "meats" and stir constantly until mixture forms a very thick paste. Continue cooking/stirring untli mixture resembles play-dough consistency.
Mix kraut with "meat mix, and run "meat" and kraut mixture back through grinder or food processor.
Form mixture into walnut-size balls. dough is very soft. Can add breadcrumbs if necessary to be able to form balls.
Mix egg replacer with water. Coat balls first in egg replacer, then coat with panko breadcrumbs.
Preheat oven to 400 degrees. Spray balls lightly with cooking spray (not included in calories). Bake until golden brown, 20-25 minutes.
Makes approx 42 balls.
