Ingredients

    6 chicken thighs
    3 eggs
    2-3 teaspoons hot sauce
    2 teaspoons water
    1 cup flour
    1.5 cups crushed ritz crackers
    1.5 cups shredded coconut
    1.25 cups apricot-pineapple jelly
    2 teaspoons garlic pepper sauce (find in Chinese section)
    2 teaspoons water


Directions

place flour in a bowl or on a plate
mix eggs, hot sauce, and water and put in a bowl
place crushed ritz crackers and coconut in a bowl

Dredge chicken in flour, then egg mixture, flour, then egg mixture and then in the coconut mixture. Place on greaced baking pan. Cook at 425 for 30 to 40 minutes (until chicken temps at 180 degrees F.
